- 1 cup walnut kernels
- 70 grams butter
- ½ cup flour
- 1 teaspoon cinnamon powder
- 1 egg yolk
- Brewed saffron as needed
Directions for Gata Armenian Cake
Step One
To prepare a delicious Armenian Gata bread, put all the ingredients at room temperature 30 minutes before. Take a bowl and pour one egg into it.
Step Two
Stir the egg with a hand mixer to remove its texture from coagulation. Add the sweet yogurt to the eggs, and mix again with the hand mixer until the ingredients are combined and uniform.
Step Three
Now, put the butter on the indirect heat of the kettle and steam until it melts. Next, add the melted butter to the egg and yogurt mixture and stir until the ingredients are combined and uniform.
Step Four
At this stage, for a better taste, add vanilla along with cardamom powder to the egg mixture, and stir.
Note: After adding each ingredient, stir until they are combined and uniform.
Step Five
Now, pour the flour with yeast, salt and baking powder into a suitable bowl, then mix well until they are uniform. Next, pour the oil into the egg mixture and mix.
Step Six
At this stage, pour the egg mixture into the flour mixture. Then mix with a wooden spoon and knead the dough with a closed fist for 10 minutes until a smooth and uniform dough that does not stick to the hands is obtained.
Step Seven
Now, put the dough on the work surface, then knead it again. Grease the inside of a suitable bowl with some liquid oil, then knead the dough and place it inside the bowl.
Step Eight
Cover the bowl with cellophane, then let it rest for 1 to 1.5 hours at room temperature until it’s doubled in size. In the meantime, you can prepare the middle ingredients of Gata bread.
Step Nine
For this purpose, pour walnut kernels into the food processor and mix until the walnut kernel is crushed. Then, place a suitable pan on low heat, and add the butter to the pan.
Step Ten
Let the butter melt, add flour to the pan and fry until the raw smell of flour is removed. Next, add brown sugar, cinnamon powder, and chopped walnuts to the flour mixture.
Step Eleven
Now, mix the middle ingredients, take the pan off the heat, and let it cool. After 1 hour and 30 minutes, put the dough on the work surface and knead again with a closed fist until it becomes puffy.
Step Twelve
Divide the dough into 2 equal parts with a cutter, then cut and cover them with a freezer bag or cellophane. Now, let the dough rest for another 15 minutes in the kitchen.
Step Thirteen
Now, roll out the dough on the work surface with hand pressure, then we roll out the dough to half a centimeter in diameter with a rolling pin. Next, we set the oven to 180 degrees Celsius and let it heat up.
Step Fourteen
Now, grease the oven tray, place the dough in the tray, and pour the middle ingredients on it at a distance of 1 cm from the edges. Next, roll the second dough to the shape and size of the first dough.
Step Fifteen
Put the second dough on the middle ingredients and apply some milk on the edges of the dough. Then push the edges of the dough with a fork. Separate the egg yolk from the egg white.
