Persian Carrot Rice Ingredients

  • 1 Navel orange peeled
  • 1/2 cup of water
  • 1/2 cup sugar
  • 3 tbsp. olive oil
  • One large onion, thinly sliced
  • One teaspoon turmeric, ground
  • One teaspoon salt
  • 1/2 teaspoon pepper, ground
  • Four pieces of chicken thighs and breasts, with bone-in and skin-on, preferred
  • 1 cup water, more as needed
  • Three tablespoons of saffron water
  • Carrots are the main ingredient. Take four medium carrots, and cut them into matchsticks.

  • Take 2 cups of white basmati rice, soak for 1 hour, and rinse

A Step-by-Step Guide On How to Make Havij Polo

Step 1: Saffron. Use a smooth mortar and pestle, grind the saffron threads into a fine ground, add hot water, stir and set aside.

Step 2: Orange. Score the navel orange into quarters with a paring knife, approximately 1/8 inch deep. Peel the orange and remove as much of the pith as possible. Thinly slice the orange peel into matchsticks.

Step 3: Place the orange peel in a small saucepan with water and sugar, stir and bring to a gentle boil. Boil over medium heat for 15 minutes without a lid, or until water and sugar boil to a small amount of syrup. Set aside. chicken

Step 4: In a large and heavy saucepan, fry the onions in 2 tablespoons of oil over medium to high heat for about 10 minutes. Add turmeric, salt, and pepper and fry for another 2 minutes.

Step 5: Remove from the pan and set aside. Add the remaining one tablespoon of oil to the same frying pan and bake the chicken on medium to high heat for 5 minutes on both sides. Return the onions to the pan, add 1 cup of water and mix well.

Step 6: Cover and cook the chicken over low heat for 75-90 minutes until the chicken is completely tender. Turn the chicken about halfway and check the liquid level. If necessary, add a small amount of water during cooking. However, be careful not to make the finished dish watery.

Step 7: Add three tablespoons of saffron water and stir once the chicken is cooked. Cook for 5 minutes and remove from stove. carrot

Step 8: Heat over medium heat, fry carrots in ghee for about 5 minutes, add orange peel, syrup, and three tablespoons of saffron water, and cook for another 1 minute. Please remove it from the stove and set it aside. cooked rice

Step 9: Choose a saucepan with a large and heavy bottom, cover, and bring 8 cups of water and salt to a boil. When the rice is cooked, add the rinsed rice and cook over high heat for about 6-8 minutes without the lid, or until the rice is a little soft.

Step 10: Drain the rice with a colander, rinse it with lukewarm water, and set it aside while preparing the pot for the next cooking step. Add two tablespoons of oil to a coated saucepan. In a small bowl, gently mix 1 cup of lightly cooked rice and two tablespoons of saffron water and spread evenly.
