How to Make Hungarian Bean Soup with Pork Ribs?
Ingredients
- 400 gr smoked pork ribs
- 300 gr of white beans
- 2 bay leaves
- 2 garlic cloves
- 1 carrot
- ½ piece of celery
- ½ kohlrabi
- 1 parsley root
- 250 gr smoked sausage
- 100 gr flour
- 1 egg
- 1 onion
- Red pepper as needed
- 2 dl sour cream
- Salt and pepper as needed
- Butter
Directions
Step One
For tatsy Jókai bean soup, soak the beans overnight. After they are soaked well, dry them, and set them aside.
Step Two
Wash the ribs, put them in a pot, and add water. Put the pot on medium heat, put the lid on it, and cook the smoked ribs (Do not add salt because smoked meat is salty.)
The ribs are ready when you can push a fork into them.
Step Three
Add the soaked beans, bay leaf, chopped carrot, celery, kohlrabi, chopped parsley root, and the rings of smoked sausage. Mix the ingredients well, put the lid on the pot, and cook over low heat.
Step Four
In the meantime, knead the flour with the egg and salt. When the beans are almost soft (the vegetables and the sausage will be cooked by then), place the dough on a floured tray and continue cooking together.
Step Five
When everything is cooked in the bean soup, half-fry the chopped onion in the butter, add flour and crushed garlic, and fry together.
Step Six
When onion and garlic are fried, remove the pan from the heat, stir in the red pepper, and pour it into the soup. Dilute the sour cream with the soup.
