What is Kolokasi or Taro?

Kolokasi (Taro) is a root vegetable native to the South Pacific Islands, including Hawaii. The root of Kolokasi is highly versatile, making it a popular choice in many traditional dishes worldwide.

The root looks like a potato but has an off-white color and dark brown skin. Inside, it contains starch which can be consumed cooked or raw while providing several essential vitamins and minerals. Kolokasi or taro can be prepared in various ways, such as boiling, steaming, baking, grilling, and more. When cooked properly, it has a nutty flavor that’s quite similar to potatoes but with an earthy sweetness when mashed or made into chips.

How to Make Kolokasi?

Ingredients 

  • 1 kg pork shoulder or leg meat 
  • 3/4 cup oil
  • 2 large Kolokasi
  • 2 finely chopped onions 
  • 1 cup ripe tomatoes juice
  • 2 teaspoons tomato paste
  • 1 cup chopped celery
  • 1-2 lemons
  • Salt and pepper as needed

Directions

Step One

Clean the Kolokasi, wipe it with a dry towel, and cut it into small pieces. In a saucepan, sauté the meat in olive oil until golden brown. Set aside on a platter as soon as it turns golden on all sides.

Step Two

Pour the chopped Kolokasi into the hot oil, fry it until a little brown, and remove it from the pan. Remove the extra oil from the pot, and leave only 2-3 tablespoons.

Step Three

Add the onion, sauté until golden, and then add the meat, the Kolokasi, tomatoes, tomato paste, and celery except for the lemon. 

Step Four

Add hot water until it covers the ingredients in the pot, and cook over low heat until the meat is tender without thickening your sauce.

Step Five

If necessary, add extra water. In the end, add the lemon juice, salt, and pepper and let it reach the boiling point and boil for a few minutes.

Note: You can also make this dish without meat. To have a vegetarian Kolokasi, remove the meat from the above ingredients.

How to Serve Kolokasi?
