How to Make Georgian Kubdari?

  • 1 kg flour 
  • 3 egg yolks 
  • 400 ml milk 
  • 100 ml water 
  • 100 grams butter 
  • 30 ml oil 
  • 1 teaspoon salt 
  • 2 teaspoons dry yeast

Inner Ingredients

  • 500 grams lamb 
  • 500 grams pork 
  • 3 onions 
  • 2 teaspoons dry coriander 
  • 1 teaspoon cumin 
  • 1 teaspoon salt 
  • Red pepper as needed 
  • 50 grams of butter (for spreading on top)

Directions

Step One

To prepare the yeast, pour milk into a bowl and add water. Pour the yeast into the mixture of milk and water and stir it well.

Step Two

Let the butter melt at room temperature (do not boil it). Then, add salt and melted butter to the yeast dissolved in milk.

Step Three

Separate the egg whites and yolks, and mix the egg yolks with the dough until well combined. Add sifted flour and knead the dough for 5 minutes. Place in a bowl, cover with a cloth and set aside.

After 15 minutes, knead the dough with oily hands, cover it again with a cloth and leave it set it aside.
