History of Persian Pistachio Brittle

The history of Persian pistachio brittle goes back to the Safavid dynasty in the 16th century. At that time, the candy was made with almonds instead of pistachios. It wasn’t until the Qajar dynasty in the 19th century that pistachios became the main ingredient in Persian pistachio brittle.

Today, Persian pistachio brittle is enjoyed by people of all ages and is a staple at Iranian celebrations and festivals.

How to Make Sohan?

Ingredients

  • 2 tablespoons of wheat flour
  • 1 tablespoon white flour
  • 210 grams sugar
  • 160 grams butter
  • 2 tablespoons honey
  • 1.5 tablespoons glucose syrup
  • ½ cup rosewater
  •  ½ teaspoon unbrewed saffron
  • ½ teaspoon cardamom

Directions

Step One

To prepare the Sohan, place a foil on the table and grease it using a brush and a little oil. Mix and pour wheat flour and white flour into a pot and put it on low heat.

Step Two

Then fry and stir the flour continuously until the raw smell of it disappears. Reduce the heat, add rosewater and sugar to the flour, and continuously fry until it reaches the boiling point. Add the butter and let the ingredients boil for a few minutes.

Step Three

Add honey, glucose syrup, cardamom, and unbrewed saffron and mix all the ingredients and keep stirring continuously for 30 minutes.

Step Four

After 30 minutes, test the concentration of Sohan with a spoon; if it is a little hard and easily separates from the pot, take the pot off the heat and spread the ingredients on the greased foil.

Key points about Making Sohan

There are a few key points to keep in mind when making Persian pistachio brittle:

  • Apart from saffron, you can also use other spices like cardamom, lemon juice, or stuffed Omani lemons to flavor your Sohan.
  • When pouring the Sohan liquid on the tray, it is better to put the pot’s contents on the flame and set the heat very low so that it does not get hardened.
  • To get a perfect consistency, it is important to ensure that the sugar syrup doesn’t get too thick or too thin. The goal is to be just sticky enough to hold the pistachios together.
  • The sugar and water mixture needs to be heated to the right temperature; if it is too hot, the candy will be hard and difficult to eat, but if it is not hot enough, it will be soft and sticky.
  • It is better to roast the pistachios before they are added to the sugar mixture; this gives the Sohan a better taste.
