Cocoa sponge cake ingredients: 

  • 4 eggs 
  • 4 tablespoons sugar 
  • 4 cups flour

Walnut sponge cake ingredients: 

  • 4 eggs 
  • 4 tablespoons sugar 
  • 4 cups flour 
  • Baking powder as needed
  • 2 cups water 
  • 4 chopped walnuts 

Vanilla sauce ingredients: 

  • 1 liter of milk 
  • 4 egg yolks 
  • 100 grams flour 
  • 300 grams sugar 
  • 0/1 liter cream 
  • Vanilla pod or vanilla sugar as needed

Syrup ingredients: 

  • 0/3 liter water 
  • 200 grams sugar 
  • 3cl of rum 
  • Grated peel of 1 orange or lemon juice 

Chocolate sauce ingredients: 

  • 50 grams butter 
  • 1 tablespoon flour 
  • 0/5 liter milk 
  • 100 grams dark chocolate 
  • 2 tablespoon cocoa powder 
  • 1 cup of sugar 
  • 2cl of rum

For Serving:

  • 150 ml of whipped cream

Directions

Step One

To prepare the Original Hungarian Somlói Galuska, separate the egg whites, mix them with 1 tablespoon of sugar until they have a foamy texture, and then set aside.

Step Two

Add the remaining 3 tablespoons of sugar, flour, baking powder, water and a little mixture of egg whites to the egg yolks and mix. Then add the rest of the foam and mix slowly. Pour the ingredients into a baking tray lined with oil paper, and bake at 200 degrees for 15 minutes.

Step Three

Prepare the cocoa and walnut sponge cakes in the same way as above.

Step Four

For the vanilla sauce, mix the egg yolks with the flour, sugar, cream, vanilla and a little milk in a bowl and stir until they are well mixed. Boil the rest of the milk and mix it with the ingredients in the bowl. Place in a water bath, thicken with continuous stirring with a whisk.

Step Five

Soak the raisins in a little water and put them in the microwave for a few minutes so that they swell. After a few minutes, take them out and set them aside.

Step Six

For the syrup, take a pot, pour sugar into 0.3 liters of water and wait until it reaches the boiling point. Meanwhile, add the grated orange and lemon peel and the rum. Set aside to cool.

Step Seven

For the chocolate coating, melt the butter and mix in the flour. Once they are mixed, add the milk, diced chocolate, cocoa powder, sugar and rum. Thicken with a whisk while continuously stirring (preferably in a water bath). The consistency should not be too thick.

Step Eight

Soak the sponges well with the syrup, then first on the walnut sponge cake, spread the walnuts with the vanilla sauce, and sprinkle raisins. Put the cocoa sponge on top, spread it with the sauce, and in the same way, sprinkle raisins and walnuts on it.
