Ingredients for Jingalov Bread

  • ½ cup flour 
  • ½ cup wheat flour
  • ½ teaspoon sugar
  • ½ teaspoon dry yeast
  • 1 cup lukewarm water 
  • 1 bunch spinach 
  • a small bunch beet tops
  • 1 bunch parsley 
  • 1 bunch dill
  • 1 bunch cilantro
  • 1 small bunch of sorrel
  • 10 onion feathers (1 medium-sized onion can be used) 
  • 4-5 tablespoons vegetable oil 
  • Black pepper and salt as needed
  • Red pepper as needed

Directions

Step One

To make the flatbread, combine flour, sugar, dry yeast, and salt in a large bowl. Everything needs to be mixed. Make a smooth dough by adding the water slowly. Let the dough rest for at least one hour and a half.

Step Two

When the dough is resting, chop all the vegetables finely. Pour them into a bowl, add vegetable oil and season the vegetables with red pepper, black pepper, and salt. Mix everything until well combined.

Note: Make sure to add salt to the greens. Adding salt will prevent the greens from releasing water.

Step Three

After an hour, knead the dough for 3 minutes again. When the dough is ready, divide it into 15-20 equal pieces. 

Step Four

Sprinkle the work surface with flour. Using a rolling pin, roll each piece into a flat cake the size of a regular plate. 

Note: Make sure to roll the dough as thin as possible. 

Step Five

Put the filling with a slide in the center of the dough. Pinch the edges of the dough like a Russian pie. Press down with the edge of the brush to flatten the dough. You can also put the filling on one half of the cake, cover it with the second part and press the edges. 

Step Six

Take a nonstick or cast iron skillet, put it on medium heat and cook the flatbread on both sides until golden spices appear.
